It came out of the Apuan Alps above the town of Carrara in Tuscany, the same quarries that supplied Michelangelo. It is timeless, it is everywhere, and it is one of the most vulnerable surfaces you can put in a kitchen.
What Carrara actually is
Carrara is calcium carbonate. The fine grey veining is the signature, softer and more dispersed than the bolder marbles. That same composition is the problem. Calcium carbonate reacts with acid on contact. Lemon, wine, vinegar, coffee, many cleaning products. The reaction dissolves the polished surface and leaves a dull etch mark. etching on Carrara is not a stain you can clean. The stone itself has changed.
Why Carrara etches so visibly

Carrara is typically installed polished, and a polished surface shows etching clearly. An etch mark is a patch where the polish is gone, catching the light differently to the stone around it. On the soft grey and white of Carrara, those dull patches stand out under kitchen downlights. The veining hides nothing. Sealer slows staining but does not stop etching. The acid still reaches the calcium carbonate at the surface regardless of how recently the stone was sealed.
